I've been making sauces for a long time but really started to use my finishing sauces a lot as a caterer to add flavor and color to a variety of different foods without adding a lot of calories.
About 5 years ago, I took over as head chef for Frescos Ristorante in Cape May, New Jersey. The restaurant serves modern coastal Italian cuisine and I started to regularly use the Chipotle Pepper Finishing Sauce in one of the dishes that became a customer favorite.
I continually look for opportunities to try new things when I’m cooking and found inspiration during a ski vacation. i decided to experiment with a new sauce and my friends continued to use the sauce on their own to add more flavor to their meals. it was that moment when i finally understood the appeal of the sauce and its versatility. the flavors i created can easily be used as a condiment, marinade, dipping sauce or as an ingredient to a favorite recipe.
